

White Mantis started as Surge Coffee in 2016 — one of the first specialty roasteries in the UAE. Over the years, we grew, refined our sourcing, deepened our farm relationships, and rebuilt the brand around a single idea: that great coffee deserves to be understood, not just consumed. We are Emirati-owned, Dubai-roasted, and genuinely proud of both.
We think coffee is most interesting at its edges: the moment a process changes how a bean tastes, the decision a farmer makes about when to pick, the seconds between under-roasted and perfect. We're obsessed with those details — not because it makes us precious about it, but because we've seen what happens to the cup when you get them right. Every bean we source, we source for a reason. Every roast profile we build, we can defend. And we share all of it — because transparency is the only honest way to sell coffee.
Quality without shortcuts. Every decision — from the farm we select to the temperature we roast at — is made with the final cup in mind, not the final margin. Transparency at every step. We publish origin details, processing methods, and tasting notes because we believe you should know exactly what you're drinking and where it came from. Partnerships that last. We work with a small number of farms and businesses deeply, not a large number superficially. Our farmers know us. Our café partners know us. That's intentional.
